Coconut and Peanut Butter Smoothie Bowl.

I’m currently writing this up for you, in a thick dressing gown, in front of the heater with a coffee!  Not the Coconut and Peanut Butter Smoothie Bowl that I want to share with you.  It’s too cold this morning for a smoothie bowl.

Cole decided getting up at 5:45am was a great plan this morning, but clever little Norah is still rugged up in bed.  She’s awake, but every time I ask if she wants to get up, she throws a huge, “No” in my direction.  I wonder if this is a little glimpse into what she’ll be like when I have to get her up for school?  Oooh that’s a worry, because she’s going to have to face the cold and get up earlier than others so that she can do her treatments before leaving the house.

Back on topic;

Coconut and Peanut Butter Smoothie Bowl.

Smoothie bowls are working so well in our house at the moment.  So well in fact that I didn’t even have to add cacao to this one!  Norah watched as I blitzed it up and then wanted to taste it straight out of the jug.  I’ve made the mistake before of serving it up without the chocolate and I was met with too very distraught toddlers.  This time I asked before I served it up, “Do you want me to add the chocolate?” Surprisingly they both answered, “No”.

Toppings.

I’ve also learnt that the twins both prefer the toppings for their smoothie bowl, on a plate next to it.  They don’t like when it sinks into their smoothie as they put their spoon into it and then they don’t end up eating any of it.  I however, love the added textures and will happily load mine up.  Maybe I should start remembering; I don’t need the extra calories though.  Turning 30, having twins and cooking for CF has definitely given me a reason to go out and buy some new clothes haha.

Coconut and Peanut Butter Smoothie Bowl

Total fat content: approximately 76.3g

Delicious, high fat, creamy breakfast.

Servings 3

Ingredients

  • 200 ml tinned coconut milk 32g of fat
  • 50 g smooth, natural peanut butter 23.8g of fat
  • 20 g tahini 12g of fat
  • 1 banana
  • 40 g avocado 8.5g of fat
  • 1 tsp honey

Instructions

  1. Place all the ingredients into a jug and blitz together with a stick blender.  Alternatively you could use a food processor.

  2. Share between 2 or 3 and top with your choice of toppings.  This is an easy way to get extra fats into the meal.
