Chocolate, Banana, Blueberry and Spinach Smoothie Bowl!

So we had a day where the kids really didn’t eat very much.  Usually on these days, I jump to the staple tasty chocolate milk.  Today when I said those words, both kids fell in a heap saying, “No tasty milk”.  Norah declared that she needed a bowl and a red spoon.  Well that I could help her with, I just needed something to whip up and put into her bowl.  This is when the Chocolate, Banana, Blueberry and Spinach Smoothie Bowl was born.

Coconut Milk and Peanut Butter for extra Fat.

Often when I make smoothies, I just use ordinary milk.  However no eating, meant higher calorie needs, which in turn meant I opted for the tin of coconut milk for this smoothie bowl.  I think the stronger flavour of the coconut helped to hide the cheeky spinach too.  Woohoo, extra veggies and they didn’t even taste them (or see them for that matter).

I add peanut butter to a lot of the kids’ food.  Sweet or savoury, it adds the extra calories and is 50% fat so its super easy to calculate as I go.  1 tin of coconut milk; 64g of fat, 50g of peanut butter; 25g of fat.  The rest of the ingredients don’t matter; fruit and veg for added nutrition, but not fat content to add.

Cacao Powder.

It truely is my friend.  Add the word chocolate and the twins will usually try it.  Sometimes my creations still don’t go down as well as I’d hope, but the cacao definitely helps.  I would happily tuck into a banana and honey smoothie, but I have learnt that our kids feel quite differently about this.  Say it with me, “ALWAYS ADD THE CACAO” haha.

Once I had blitzed up all the ingredients and poured it into the bowls, just like Norah had asked and then found a red spoon, just like she had requested, then she wanted me to pour it into a cup!  Toddlers!!  Seeings as though I added an extra banana and made this a smoothie bowl, it was probably too thick for a cup.  But hey I’m not going to be the one arguing about how the calories are getting into little missy as long as they are getting in.

After all the messing around and creating more dishes for myself (and we have no dishwasher), I’m very happy to report that both children had a 100g serving.  Norah managed to suck hers up and I helped her to scrape the bottom of the cup with the spoon and Cole wanted seconds.

Ingredients

  • 400 ml coconut milk 64g of fat
  • 50 g smooth, natural peanut butter 25g of fat
  • 1/4 cup frozen blueberries
  • 1/4 cup frozen spinach
  • 2 tsp honey
  • 2 bananas

Instructions

  1. Place all the ingredients into a large jug and blitz with the stick blender.  Or place all the ingredients into a food processor. 

  2. Pour out servings into bowls, containers or jars.  Serve immediately or store in the fridge for up to 24 hours.

Total fat content approximately 84g of fat.  I made 7, 100g serves at approximately 13g of fat per serve.
