Double Chocolate Muffins!!! Oh my goodness they’re sooo yummy. I’ve had a few sneaky ones to myself, but been even naughtier and heated them up and added some cream (sssshh). Happy to say they definitely satisfy the sweet tooth.

These Double Chocolate Muffins are the real deal! Perfect as they are or warmed up with some cream.

Cake or Muffins.

The first time I made this I made it as a cake. I think the kids actually liked it better this way. I’m not sure why, I thought they’d be more excited about patty pans, but I guess I was wrong. I just thought I’d let you know, because it worked both ways with the same amount of cooking time.

The real Deal.

These Double Chocolate Muffins, look like the real deal. Not a ‘Mum’s blog’ recipe as the kids sometimes now see my food. I mean they do have real chocolate chips in them, so it’s probably a recipe you don’t want to make making every week, but it makes a nice change to always cooking the ‘healthier’ recipes.

On the go.

We’ve taken some Double Chocolate Muffins to clinic recently and they traveled well. They’re also great for a quick dessert or taken along for a picnic somewhere now that the weather is starting to warm up (if you’re somewhere where it’s colder…. definitely try heating them up before you eat it, you won’t regret it.)

Cook Time 30 minutes

Ingredients

  • 30 g coconut flour 2.6g of fat
  • 130 g almond meal 71.1g of fat
  • 70 g dark chocolate chips 20.9g of fat
  • 120 g melted butter 98.4g of fat
  • ¼ cup maple syrup
  • 60 ml tinned coconut milk 9.6g of fat
  • 1 tsp baking powder
  • ¼ cup cacao powder
  • 5 eggs 22g of fat

Instructions

  1. Preheat the oven to 180°c

  2. Place patty pans into a muffin tray

  3. Mix all the ingredients together except for the chocolate chips.

  4. Once the ingredients are fully combined, add the chocolate chips and fold through.

  5. Evenly fill the patty pans

  6. Place in the oven for 30 mins

  7. Allow to cool before serving. (They taste delicious warm, but come out of the patty pans better when they're cold.)

  8. Store in an airtight container in the fridge.

Total fat content: Approximately 224.6g
