Strawberry and Avocado Smoothie Bowl.

We went grocery shopping a couple of days ago and I had forgotten all about the punnets of strawberries in the back of the fridge.  The kids love strawberries, but I needed a way to use these ones up fairly quickly before they went bad.  Would you believe we ran out of banana today too!!  Bananas are a staple in most smoothies that I make up for the kids.  No bananas, plus lots of strawberries, gave me the opportunity to try something different.  Extra fat with avocado, peanut butter and some coconut milk and we had our first strawberry and avocado smoothie bowl.

Toppings.

I thought I’d jazz up the bowls a little bit and get the kids interested.  This was something they hadn’t eaten before.  Shaved coconut looks pretty, but it also adds a little more fat to a dish too.  Dark chocolate, just for a little bit of indulgence and strawberries just to reinforce the fact that there are strawberries in the bowl.

The idea was there, the kids came running when they saw the bowls on the table.  But then when they tried to scoop the chocolate out of the strawberry and avocado smoothie bowl it disappeared under the mixture and they were very unimpressed.  It took a great del of effort on my part to get them to try the smoothie after that.  They were too upset by the chocolate sinking and then when I scooped it out for them, being covered by the smoothie.  Maybe next time I’ll serve the little extra bit on a plate separately and maybe they’ll have a better go.  Or they’ll just eat the chocolate and leave the rest haha.

Silky smooth smoothie bowl.

Ingredients

Smoothie Bowl

  • 200 ml tinned coconut milk 32g of fat
  • 250 g strawberries
  • 40 g smooth, natural peanut butter 19g
  • 70 g avocado 14.8g of fat
  • 1 tsp honey

Toppings

  • 4 pieces (25g) Cadbury Dark Baking chocolate 7.6g of fat
  • 1 tbsp shaved coconut 5g of fat

Instructions

  1. Wash and hull the strawberries.

  2. Scoop out the flesh from the avocado.

  3. Place all the ingredients into a large jug and blitz together with a stick blender.  Alternatively you could use a food processor.

  4. Share between 3 bowls and top with toppings.
