Banana Bread Bliss Balls

Banana Bread Bliss Balls.

“But waiting is so hard! I want to eat one nooowww” said Norah as I was rolling out these new Banana Bread Bliss Balls.

I had the idea of turning my Peanut Butter Banana Bread into bliss balls. Why? Simply because of the first sentence in this post…. “Waiting is hard”. Banana Bread Bliss Balls means no cooking time!

Using the same flavours.

I’ll admit, the texture of the dough, took a bit of work. I started with almond meal, banana and peanut butter, because well, they’re the main flavours in the bread. I quickly realised my ratios were a little out and the dough was too sticky.

More almond meal!!….. well actually no, we had none left. And with the rain we’ve been having I wasn’t about to put both kids in the car, just to go and get almond meal. Who am I kidding? Even if it wasn’t raining, there’s no way we were making a trip just for that.

So instead I stood like a toddler (or threenager) at the pantry with the door wide open, searching for something else. Oats! Ideally I would have liked to put them in the blender first to break them down without the wet ingredients, but I was too far into this new Banana Bread Bliss Ball recipe for that. I chucked in what we had left, but just like the almond meal, there were now no more oats and the dough was still too wet.

Cashews.

Cashews; extra fat content, Norah loves them, perfect! Again I would have liked to blitz the cashews up before everything else, but a few chunks in the dough really wouldn’t matter. Slowly I was getting somewhere.

Coconut Flour.

Coconut flour…. and guess what!? Brand new bag. I don’t use coconut flour in much to be honest. I’ve been experimenting with it because I’d really like some nut free recipes up my sleeve, but I can never seem to get the texture right. There’s only a small amount in my Banana Pancakes, and it’s really not noticeable. When I use it it bigger quantities though, I feel like it’s too ‘bitty’.

Whoop whoop! Finally my dough formed a ball in the food processor. It was still quite sticky, but I was happy with the taste.

Chocolate.

Now there’s no chocolate in my usual Peanut Butter Banana Bread, but I did make a loaf this week with a chocolate swirl through the top using my Chocolate Hazelnut Spread. The kids do love chocolate (just in case you haven’t noticed a common theme in most of my recipes), so I thought I’d ‘chocolate up’ these Banana Bread Bliss Balls too.

Real chocolate! You should have seen the twins’ eyes light up when I put the block on the bench. Instantly they were asking for a taste. I used 70% dark chocolate, so I really wasn’t sure if they’d like to just eat it as it was. As I finely chopped it up, I gave them little pieces to taste. They did like it and they asked for more, but it’s quite rich so they were happy with just a couple of bits.

Honestly you don’t need to use as much chocolate as I did. Also, you could use whatever sort of chocolate you prefer. I feel better using a darker chocolate because I know it contains less sugar and is better for you. Not that I’m a nutritionist of any kind, I guess that’s just common knowledge.

Banana Bread Bliss Balls.

I added the chopped dark chocolate to the dough. It was easiest to mix it evenly through using my hands. To form the balls, I simply used a tablespoon sized measuring spoon, filled it up with dough and pushed it along the edge of the bowl. This way all the Banana Bread Bliss Balls were the same size and the spoon pretty much made the shape for me.

Banana Bread Bliss Balls

Banana Bread Bliss Balls; When you want all the flavour of banana bread, but don't want to wait for it to cook!

Ingredients

  • 150 g almond meal 82g of fat
  • 1 tbsp natural smooth peanut butter 9.8g of fat
  • 1 banana
  • 1/2 tsp cinnamon
  • 120 g cashews 59g of fat
  • 60 g rolled oats 5.2g of fat
  • 40 g coconut flour 3.4g of fat
  • 1 tbsp coconut oil 20g of fat
  • 1 tbsp maple syrup
  • 100 g 70% Dark Chocolate 41g of fat

Instructions

  1. Place all you ingredients except for the dark chocolate into the food processor.

  2. Once the ingredients are combined and resembles a sticky dough, place it into a medium sized mixing bowl.

  3. Finely chop the dark chocolate.

  4. Add the chocolate to the mixing bowl with the dough and mix it through evenly.

  5. Use a tablespoon sized measuring spoon to scoop up portions of the dough and roll it into balls.

  6. Store in an airtight container in the fridge.

Recipe Notes

Total fat content: approximately 220.4g of fat.

20 bliss balls at approximately 11g of fat per serve.
