Avocado and Peanut Butter Brownies.
I recently posted about discovering gold…. the special fatty, green variety of gold. Haha, ok more like bulk, cheap avocados! Like I said before, gold in the eyes of a CF Mummy. I’ve made a few different things already with avocados. A mixture of sweet and savoury. The Avocado and Banana Mousse, is one I’ve been making for the twins since they were babies. I gave it to them tonight for dessert and they both inhaled a serve each. Today I tried something a little different; Avocado and Peanut Butter Brownies. I was pretty impressed by them… even if I do say so myself.
Not your typical Brownie.
I’ve made brownies a heap of times! Always from scratch, but always FULL of sugar. It’s funny how having kids make you rethink some of the things you’ve been doing for years. If I don’t think the twins should be eating truck loads of sugar, why should I? This recipe does have 1/2 a cup of coconut sugar. Still not great, but much better than what I’ve made previously. These Avocado and Peanut Butter Brownies are a ‘sometimes food’. I love them though because they’re full of healthy fats and the kids just think it’s chocolate.

Avocado and Peanut Butter Brownies
Delicious, moist, chocolate brownies.

Ingredients
- 400 g avocado 84.8g of fat
- 125 g natural, smooth peanut butter 59.5g of fat
- 100 g butter 82g of fat
- 2 tsp vanilla paste
- 2 tsp baking powder
- pinch salt
- 2/3 cup cacao powder
- 1/2 cup coconut sugar
- 80 g dark baking chocolate 33.3g of fat
Instructions

Pre heat the oven to 180 degrees.

Line a baking tin with baking paper.

Place all the ingredients except for the dark chocolate into the food processor and blitz until smooth.

Cut the chocolate into small chunks and fold through the batter.

Pour the mixture into the tin and bake for 25-30 mins.

Remove from tin and allow to cool before cutting into pieces.
