Creamy Avocado Hummus.

I’ve said it before, and I’ll say it again; “Thank goodness for Hummus!”  It has been a safe bet for a lot of months now.  When Norah’s having a ‘food ban’ Hummus usually brings her out of it.  Some of you will already know that I luckily came across bulk avocados recently (way cheaper than what they have been in the supermarkets!) and I’ve been altering lots of recipes (Avocado and Peanut Butter Brownies, Strawberry and Avocado Smoothie Bowl just to name a couple) to add more into Norah’s meals.  There was a time, when she’d happily eat them…. but you know toddlers; just because they ate it once, doesn’t mean they’re going to eat it again.  Heck, what they just ate, might be ‘yuck’ 3 minutes later!  There’s always a risk of ruining a favourite snack or meal when you change it, but I was brave enough to give it a go.  I’m very glad I did, because she loved the Creamy Avocado Hummus, just as much as the original.

Super Simple.

Before having the twins and before learning more about good fats, I had never made Hummus.  It was easy to buy a tub from the shop and add it to whatever platter we had put together.  I don’t think I really even loved it.  I ate it, but I wasn’t too fussed.  Now I’m wondering why I even bought it in the first place?  It’s funny how as you grow up you will eat foods that you don’t love.  Wouldn’t it be great if you were born that way and no parents ever had the struggle of fussy eating!?

Anyway I’m rambling; what I’m trying to say is that home made Hummus is delicious and it’s also super simple to make.  When you make it yourself, you also know exactly what’s going into it and you can add as much fat as you like.  This is another reason I thought I’d give this Creamy Avocado Hummus a go.  Extra fat in the same dip.

Portions and Storage.

To be perfectly honest with you, the easiest way for me to figure out how much fat is in a serve is to portion the whole lot out.  Mostly because I rarely weigh the ingredients that don’t contain fat, so I don’t know what the total weight of the dish is.  Sometimes I don’t even weigh the serves.  Moulds or little baby food containers work so well for this.  Plus the kids only eat such a small amount at once, so doing it this way makes it easy to freeze left overs.  I know as Norah gets older, it will be easier.  I will make dinner for everyone, divide it onto 4 plates and that’ll be it.  While they’re little, I’ll keep doing what works for us.

 

 

Creamy Avocado Hummus

Even better than the original!  You'l wonder why you never put avocado in your Hummus before.

Ingredients

  • 70 g tahini 42.5g of fat
  • 1 lemon
  • 1 clove garlic
  • 120 ml extra virgin olive oil 109.8g of fat
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 400 g chickpeas 5.6g of fat
  • 160 g avocado 33.9g of fat

Instructions

  1. Blitz the tahini with the juice of the lemon until it forms a smooth paste.  You may need to scrape the sides down.

  2. Add the garlic, extra virgin olive oil and spices and blitz to combine.

  3. Drain and rinse the chickpeas.  Add them to the bowl and blitz.  You will need to scrape down the sides of the bowl several times.

  4. Add the avocado and blitz until smooth.  Again scraping down the sides as needed.

  5. Store in an air tight container in the fridge or freeze in individual portions and pop out as needed.
