Peanut Butter Squares!
Why not peanut butter cups? That’s simple; Everyone makes peanut butter cups. No in all honestly all my other moulds were full the first time I made these. Now the kids recognise them as being square. Why mess with something that works? Peanut Butter Squares they are! And they’re so yummy!
Try them a little smaller.
These Peanut Butter Squares are quite thick, so sometimes the kids want me to cut them into quarters for them. They would probably work better a little smaller, but whatever size you make them the recipe will be the same. The fat content will obviously be different per portion, but in that case just use the total fat content and divide it by however many Peanut Butter Squares you make. Easy.
No Cooking!
These Peanut Butter Squares are super simple because there’s no cooking involved. I do give the peanut butter and coconut oil a quick zap in the microwave, but I wouldn’t exactly call that cooking.
I finished making these squares just as the kids were waking up, so the end measuring/assembling was done with Norah on my hip. They may not be super pretty, but they still taste amazing.
They melt quickly in hot little hands.
Make sure you eat these Peanut Butter Squares straight from the freezer. They are definitely not something you can pack in a school lunch box or take on a picnic because they will melt. Even with the thickness of the ones I make, the twins manage eating them because they do soften quickly. A double batch might be a good idea too because they never last long! I’m even guilty of sneaking one in after the kids have gone to bed. They really are that good.

Peanut Butter Squares
Vegan, no cook, delicious Peanut Butter Squares (or cups). So yummy, just try and stop at one!
Ingredients
Bottom Layer
- 200 g natural smooth peanut butter 95.2g of fat
- 5 tbsp coconut oil 100g of fat
- 1 tsp vanilla paste vanilla extract would work too
- 6 tbsp cacao powder
- 4 tbsp maple syrup
Top Layer
- 200 g natural smooth peanut butter 95.2g of fat
- 4 tbsp coconut oil 80g of fat
- 1 tsp vanilla paste vanilla extract would work too
- 1 pinch salt
Instructions

Place the coconut oil and peanut butter for the top and bottom layers in to seperate microwave safe bowls.

Place the bowls into the microwave for approximately 30 seconds each to melt the coconut oil. Add the rest of the ingredients and mix to combine.

Use a tablespoon measure and place 1 slightly heaped tablespoon of the bottom mixture into your moulds. Tap the mould on the bench to flatten out the layer.

Once you have used up all the chocolate, repeat the same steps with the peanut butter mixture, pouring on top of the bottom layer.

Give the moulds one more tap and place in the freezer to set. Eat straight from the freezer.
Recipe Notes
This made 16 peanut butter squares at approximately 23g of fat per serve. The total fat content is approximately 370g of fat, so if you make smaller ones just divide 370 by the amount of squares you make.
