Triple Chocolate and Peanut Butter Cookies.

So here we are, isolated, this is now week 6. I’m not going to lie, it’s been tough. The kids have had their good days and their not so good days. One of the best ways to pick up their mood is to get them in the kitchen or make them something yummy. Today I created some new Triple Chocolate and Peanut Butter Cookies for them. Let me tell you now; they loved them!

Isolation.

With Norah having Cystic Fibrosis, we are not new to isolation. We often don’t see friends for big chunks of time because they have been unwell. It’s difficult, but we do our best to keep Norah healthy. It can be quite lonely, but generally we still get out of the house or have family visit. This is a whole new level of isolation. This is very hard.

Everyone has their own stories to tell during this time. No two households are the same. Whether you’re isolated on your own, working from home to protect your family, or still having to face the workforce, knowing you could potentially be bringing the germs home to loved ones, the unknown is scary.

Keeping the kids happy.

So the kids know we can’t go out and see anyone. They just think everyone is sick and we need to wait for them to get better. I guess they’re kind of right, but they’re too little to understand anyway. So I will do my best to make their days happy and keep the twinkle in their eyes with things like these Triple Chocolate and Peanut Butter Cookies.

I know it’s been a long time in between recipes. Sometimes it’s all easy and everything lines up and the next; 6 months have gone by and I’ve barely had time to think about it. I will say this though; I make my Chocolate, Peanut Butter and Tahini Smoothie for Norah all the time! I finally realised I need to double the recipe and store the left overs in empty peanut butter jars (we have a whole cupboard full!), so that I don’t need to make it everyday.

Chocolate and Peanut Butter.

Chocolate and Peanut Butter is still very much a theme is this house. We are slowly adding more dinner foods onto Norah’s list of ‘will sometimes eat’. Honestly, I’m pretty happy with that. It’s not giant wins, but it’s baby steps and progress is progress. I can make the healthier snack options and get her calories in that way.

I’ve actually used plain flour in this recipe which is a little different. I usually opt for almond meal because it’s makes the fat content a whole lot higher for Norah. Being in isolation however, means it’s not as easy as just popping out to the shop and grabbing bits and pieces we need. I had actually planned to make my Chocolate Peanut Butter and Tahini Cookies, but when I got the almond meal out of the pantry it had moths in it. Thankfully I threw the bag out and haven’t seen anymore. With everything going on, that’s definitely not what we need.

Putting it all together.

The mixture for these Triple Chocolate and Peanut Butter Cookies all came together easily enough just using a metal tablespoon. This makes it super easy to get the kids involved. The mixture does end up being rather sticky. I found using an ice cream scoop with the release handle was the best way for me to get evenly sized balls of cookie dough onto my baking paper. Then I flattened them out slightly with the back of a wet tablespoon.

Real Chocolate.

I used real chocolate in these Triple Chocolate and Peanut Butter Cookies *gasp*. I’m not going to pretend the kids don’t eat junk. They definitely do. But I do like to try and minimise it where I can. Over Easter and during this unfamiliar time, the rules have been slightly relaxed. Mostly just because it’s been easier and we’re just doing what we can to get through and have some fun. This is probably why they kids loved the biscuits so much. They helped put the chocolate chips into the batter and they could see the oozing, melting chocolate before they took their first bite.

Triple Chocolate and Peanut Butter Cookies

Ingredients

  • 60 g butter (softened) 49.2g of fat
  • 60 g smooth natural peanut butter 29.4g of fat
  • ¼ cup honey
  • ½ tbsp vanilla paste
  • 1 egg 5g of fat
  • cup plain flour
  • 1 tsp baking powder
  • 2 tbsp cacao powder
  • 70 g dairy milk chocolate chips 19.7g of fat
  • 20 g dark chocolate chips 6g of fat
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 180° and line a tray with baking paper.

  2. Add the butter, peanut butter, honey, egg and vanilla paste to a large mixing bowl and mix until well combined.

  3. Add the flour, cacao and baking powder to the wet mixture and mix until fully combined.

  4. Fold through the milk chocolate chips.

  5. Use and ice cream scoop to create evenly sized cookie dough balls on the lined baking tray.

  6. Use the back of a wet metal spoon to flatten the tops of the cookie dough balls.

  7. Press the dark chocolate chips evenly on the top of each flattened cookie dough ball.

  8. Bake for 12 mins.

  9. Allow to cool before serving.

  10. Store in an air tight container, at room temperature.
