I love waffles. If we go out for breakfast and they’re on the menu, you can be sure that’s what I’ll order. I never realised how easy they were to make though, until I got my first waffle maker!!

I’ve made waffles quite a few times since buying the waffle maker. The kids like them too, which is awesome. I’ve had plans to mess around with different recipes for a while now, but always end up just making normal waffles because the kids are hungry and I don’t have the time.

Today though, the kids were playing on their own (shock horror!!) so I took my opportunity and steamed a sweet potato. That sounds funny…. first I decided I wanted to try to make Sweet Potato Waffles for lunch and then I steamed a sweet potato haha.

Norah likes sweet potato.

Norah likes roast sweet potato, but she’s fussy if the edges are too dark or caramelised. She won’t eat the peel either. Pretty much I cut reasonable sized chunks and then once they’re cooked I have to cut the sides off for her. Frustrating yes…. but she eats them like that so I do it. So I know she likes the flavour of sweet potato, but you’ll never believe it; she didn’t just eat one Sweet Potato Waffle today, she ate 2!!

If you have purée sweet potato ready to go, this meal will be a lot quicker to put together. I had to steam and mash mine first, but I did other things while they were cooking so it really didn’t matter. I also soaked the rolled oats in the coconut milk while the potato was cooking. I’m not sure if that made a difference or not, because I haven’t tried it without that step.

Sweet or Savoury.

I love that waffles can be sweet or savoury…. or even both together. I made enough of these new Sweet Potato Waffles to try them both ways. Bacon and spinach with one stack (next time I’ll fry an egg too!) and ricotta, maple syrup and blueberries on another! Let me tell you, they were both delicious.
Hmm reading that out loud I think I’ll have to try something with chocolate too.

The Sweet Potato Waffles are actually quite sweet on their own. I did use full fat coconut milk in them too and that flavour is quite strong. But I served up a plate and gave them to hubby (without letting him know what he was eating) and he ate it and enjoyed it. Usually he’s all for the original, not so healthy version of everything haha.

Sweet Potato Waffles

These delicious Sweet Potato Waffles are the perfect healthy fat, healthy carb meal option for breakfast, lunch or dinner!

Ingredients

  • 1 medium sweet potato 3/4 cup of sweet potato puree
  • ½ cup rolled oats 5g of fat
  • 165 ml full fat tinned coconut milk 27g of fat
  • 60 ml water
  • 1 tbsp maple syrup
  • 2 eggs 10g of fat
  • 40 g almond meal 20g of fat
  • 1 tbsp coconut oil 20g of fat
  • 1/4 tsp baking powder
  • olive oil spray for the waffle maker

Instructions

  1. Peel and cut the sweet potato into cubes.

  2. Place the potato into a steaming basket, over a saucepan of water on a medium high heat, on the stove top. Cover and cook until you can easily pierce the potato with a knife. (approximately 25 mins.)

  3. While the potato is steaming, add the rolled oats to a bowl and mix them with together with the tinned coconut milk. Leave to soak.

  4. Turn on your waffle machine.

  5. Once the potato is soft, blitz until smooth in a food processor (make sure you can use hot ingredients in your processor, you might have to wait for the potato to cool.)

  6. Remove the potato from the processor bowl and measure out 3/4 of a cup to put back in. Place the rest of the puree sweet potato in an airtight container and store in the fridge to use up in another dish.

  7. Add the rest of the ingredients into the food processor and blitz until smooth. You may need to scrape the sides of the bowl a couple of times.

  8. Once the waffle machine has heated up, give it a light spray with olive oil. Then spoon ⅓ cups of the mixture into each section and close the machine.

  9. Wait for the light to turn green again and then check your waffles. They should lift out of the waffle machine easily. If they don't, close the lid and cook for a minute or so more.
