Sun Dried Tomato and Avocado Pesto.

Norah is not a big eater.  This means getting enough fat into her each day is often a challenge.  I am so grateful that she eats pesto.  Not only is it full of good fat, I can sneak other veg into it too.  Her absolute favourite at the moment is our Sun Dried Tomato and Avocado Pesto.  She loves it with rice noodles.   It is however, another ‘silly’ meal where we don’t actually call it by its name.  It’s not pesto, it’s ‘Red Noodles.’  As you read through my posts, you’ll find that to keep the twins interested or to get them to try something new, we have to make it a bit more fun for them.  Just like our Pumpkin and Passata Pasta Sauce; in Norah and Cole’s eyes they are eating ‘dirty worms’. Hahaha.

Pine Nuts.

I’m not sure how the kids decide what food they are going to try and what food they immediately turn their noses up at.  Norah is very excited by ‘teeny tiny’ things.  It doesn’t matter whether it’s a teeny tiny rock, button, doll or whatever else it is that she’s found.  If it’s teeny tiny she thinks it’s cute and she likes it.  Perhaps this is why she has chosen to like pine nuts.  They are teeny tiny.  They’re also a lot softer than other nuts like peanuts or almonds.  I guess that makes them easier for her to eat.

She’s not fussed whether they’re toasted or raw either.  I know most pesto recipes call for toasted pine nuts, but when it’s dinner time and I have 2 hungry toddlers, chucking them straight into the food processor, skips a step and saves a couple of minutes (and doesn’t dirty a frying pan).

I do have a recipe for Avocado and Roasted Cashew Pesto, which obviously I roast the cashews first, but I guess that’s when I’m a little more organised or have prepared dinner.

Empty Bowls.

I remember before the twins were sleeping through, each night I would put them down and try something slightly different.  Getting them to stretch out the hours between bottles or needing settling, was my personal challenge.  Sometimes things worked and sometimes I should have left the routine the same as the previous night.

I guess this is now the same for eating.  They sleep through (most nights) and so now my daily challenge is getting empty bowls after meal times.  The thing is, this challenge happens at least 3 times a day, which leaves a lot more room for trial and error.  Some days, I seem to fail each time and other days we get empty bowls (and I do a happy dance on the inside!).  When I serve up this Sun Dried Tomato and Avocado Pesto, 9/10 I will end up with 2 empty bowls.  And 2 empty bowls = 1 happy Mumma.

Sun Dried Tomato and Avocado Pesto

Deliciously high in good fats and super simple to make.

Ingredients

  • 40 g pine nuts 27.4g of fat
  • 30 g grated Parmesan cheese 8.3g of fat
  • 70 g avocado 14.8g of fat
  • 1 cup sun dried tomatoes
  • 2 tbsp red wine vinegar
  • 2 cloves garlic
  • 1 cup basil
  • 180 ml extra virgin olive oil 164.7g of fat

Instructions

  1. Place all the ingredients except the oil into the food processor and blitz until smooth.

  2. Slowly pour the extra virgin olive oil into the food processor, while it's on to incorporate the oil with the sun dried tomato mixture.

  3. Place in an air tight container and store in the fridge for several days, or portion it out and freeze.

10 serves (2 tbsp of pesto a serve) at approximately 21.5g of fat per serve.
