Place all the ingredients except the oil into the food processor and blitz until smooth.
Slowly pour the extra virgin olive oil into the food processor, while it's on to incorporate the oil with the sun dried tomato mixture.
Place in an air tight container and store in the fridge for several days, or portion it out and freeze.
