Sun Dried Tomato and Avocado Pesto

Deliciously high in good fats and super simple to make.

Ingredients

  • 40 g pine nuts 27.4g of fat
  • 30 g grated Parmesan cheese 8.3g of fat
  • 70 g avocado 14.8g of fat
  • 1 cup sun dried tomatoes
  • 2 tbsp red wine vinegar
  • 2 cloves garlic
  • 1 cup basil
  • 180 ml extra virgin olive oil 164.7g of fat

Instructions

  1. Place all the ingredients except the oil into the food processor and blitz until smooth.

  2. Slowly pour the extra virgin olive oil into the food processor, while it's on to incorporate the oil with the sun dried tomato mixture.

  3. Place in an air tight container and store in the fridge for several days, or portion it out and freeze.
