Choc Coconut Mug Cake.

Today I created a new Choc Coconut Mug Cake. It wasn’t really on the cards, but I had two, 2 and a half year olds asking for cake. Why? Well because yesterday was their Dad’s birthday which meant they got to have some birthday cake. REAL birthday cake; with all the sugar and other rubbish in it. Let me tell you, they loved it…. but it’s not something I will allow them to eat regularly.

Birthday Party at Dad’s Work.

It was a bit of a special afternoon for them. I packed up the car with the cake, a picnic blanket, a knife, paper plates, birthday candles, matches and all the special presents we had ready to go and drove to their Dad’s work.

We had a small birthday party in the back of the car and Cole and Norah gave Cody the presents they had made for him. I started a little tradition last year with photos for his birthday. Well actually, last year I took the first photo and this year I took it again and made it into a tradition.
Look at these cheeky twins wearing their Dad’s clothes. And how much have they grown in 12 months!?

Extra Special Birthday Present.

Not forgetting the fur baby, I helped everyone make an extra special birthday present this year. I used the twins hand prints and a paw print from the doggo. It would be a great gift for Father’s Day or a birthday and it was pretty simple to make (with only a few bits and pieces).

Anyway back to the Choc Coconut Mug Cake and why I was making it. Since our little car birthday party, the kids have not stopped talking about birthday cake. They’ve even been playing birthday parties with their soft toys and pretending to blow out candles. They keep asking me for more birthday cake.

When we left yesterday I left the cake with Cody and told the twins he was going to share it with the people he worked with. I have been telling them all day that there’s none left. They understand that, but it doesn’t stop them asking. So after they ate their lunch (peanut butter monsters), I grabbed out some ingredients and tried to jam as much fat into a mug as I could, while hopefully, somehow resembling a real chocolate cake.

Second Attempt for the Win.

My first attempt was garbage and I ended up throwing it in the bin. But the second one was delicious; Choc Coconut Mug Cake. Not only is it full of good fats but I put a whole tablespoon of peanut butter on top before serving it up (with a little sprinkle of real chocolate, just to try and trick them). Do you want to know how much fat I managed to get in this one Choc Coconut Mug Cake? 81.7g! (That’s with the extra peanut butter). Not something I suggest you eat regularly if you are not on the weight gain train! Make sure you try it once though, because it’s really yummy!

Now, did I fool the kids with this Choc Coconut Mug Cake? If I’m honest with you, no (insert sad face). They said it looked and smelt delicious, but they weren’t so sure of the taste. Well I’m not even sure if the taste was the problem. It could have just possibly been the fact it wasn’t an actual piece of cake that they could pick up and bite. It might have been more of a texture thing. I don’t know? But you know what? It was good and they don’t know what they’re missing out on haha.

More Experimenting to Come.

I’ll try again, maybe I can experiment and actually bake a cake in the oven. Maybe if I can cut it up, they’ll be more excited to give it a try. I wonder if by the time the next birthday comes around I’ll be able to make a high fat, healthy cake and they won’t even miss the ‘real’ cake…… who am I kidding?

Ingredients

  • 40 g almond meal 21.9g of fat
  • 2 tbsp cacao powder
  • 1/4 tsp baking powder
  • 2 tbsp coconut oil 40g of fat
  • 2 tbsp tinned coconut milk 4.8g of fat
  • 1/2 tsp vanilla paste
  • 1 tbsp maple syrup
  • 1 pinch salt
  • 1 egg 5g of fat

Topping

  • 1 tbsp natural peanut butter 10g of fat
  • drizzle tinned coconut milk
  • 1 square milk or dark chocolate

Instructions

  1. Place all the ingredients into a small bowl and mix together until fully incorporated.

  2. Transfer the mixture into a large microwave safe mug.

  3. Microwave on high for 2 minutes.

  4. Top with a spoon full of natural peanut butter, a drizzle of coconut milk and some shavings of chocolate.

    Share between 2.
