Cashew, Coconut and Chocolate Bliss Balls.

Everyday I tell myself that I’m not going to cook anything extra.  The freezer is full of food for the kids and I don’t want to add more dishes, because I hate cleaning the kitchen.  And then, the kids wake up from their nap, and we have a big chunk of time to fill and we mess up the kitchen again!

I didn’t really have anything particular in mind to make this afternoon, I just opened the pantry and hoped for some inspiration.  Nuts are a staple in our house (I dread how I will get the fats in once the twins go to school).  So of course there was a bag of raw cashews and they were a perfect starting point for a new bliss ball.  The kids helped to put a few more ingredients up on the bench and we made Cashew, Coconut and Chocolate Bliss Balls.

 

No Bake.

Any recipe that doesn’t need cooking, to me is an added bonus.  Most of the time it’s quicker and if it’s something that doesn’t need time to set, the kids can help and then eat it straight away.  There’s nothing worse than having 2 hungry kids, watch something being plated up and then telling them they have have to wait for it to cool down.  That usually always ends in tears.

Bliss balls usually fall into the ‘no cook’ category.  And these Cashew, Coconut and Chocolate Bliss Balls do just that.  You will need a pretty good food processor, but it really is as simple as; weigh it out, chuck it in, blitz it up and roll into balls.

Noisy!

I won’t lie, when I first turned the food processor on it made a lot of noise.  Cole ran away because he was scared.  It took about a minute for the sound to lessen as the cashews began to break down.  Cole was back straight away so that he could be a part of it all and get in a sneaky taste of the mixture before it was rolled.

 

Enzymes.

If you or your child have Cystic Fibrosis, make sure you have the Enzymes ready to go.  Even though this recipe required no cooking, I still had two impatient toddlers as we rolled them out and I calculated the fat content.  They demolished 2 each as soon as they were ready.  Woohoo 16g of healthy fat in a little afternoon snack!

 

 

Cashew, Coconut and Chocolate Bliss Balls

No cook, delicious bliss balls

Ingredients

  • 150 g raw cashews 88.6g of fat
  • 40 g desiccated coconut 26.2g of fat
  • 2 tbsp coconut oil 25.8g of fat
  • 10 medjool dates
  • 2 tbsp cacao powder

Instructions

  1. Weigh/measure out all the ingredients and add them to the food processor.

  2. Blitz the ingredients until it forms a sticky crumbs.

  3. Use a tablespoon to measure out the ingredients and roll into balls.

Eat straight away for a softer texture or store in the fridge for them to harden.
