Peanut Butter Banana Bread.

I know I know, here I go again with banana and peanut butter. But hey this time there’s no chocolate involved. Gluten free; Peanut Butter Banana Bread…. yummo! The kids love it, it’s super easy to make and one slice with butter is a packed with good fats. We go through heaps of the stuff!

Gluten Free.

I use almond meal in this Peanut Butter Banana Bread. Not because we are following a gluten free diet, but because it’s higher in fat. I do however know that cutting down the gluten is also better for all of us, so I guess that’s a win win.

If you are gluten free, this recipe would be a great one for you. But if like me you don’t need the extra calories, maybe have a smaller slice without the butter haha.

Bananas!

Our fruit bowl seems to always be full of over ripe bananas. Not because we forget about them or don’t want to eat them. But because that’s the best way to use them in most of the recipes I’ve been sharing with you.

I’ve made the Peanut Butter and Chocolate Ice Cream 4 times now and the kids are still asking for it.

Norah loves smoothies for breakfast and they usually have banana in them. We even tried some Banana Bread Bliss Balls recently (I promise I’ll share the recipe!).

Ah and don’t forget about my very first post; Banana Pancakes with Sweet Sauce. I can’t tell you how many times I’ve made this (if you don’t have time to wait for the Peanut Butter Banana Bread to cook, this is definitely a great option because it’s super quick!).

So pretty much, I buy the ripest bananas I can find and then I leave them. Sometimes it’s the kids that decide what they’re going to be used for. But this morning I decided to put on the Peanut Butter and Banana Bread before we did physio so we could have it for breakfast.

Kiddos in the Kitchen.

Cole was in the kitchen immediately. He wanted to mash the bananas, pour in the dry ingredients and stir it all together. He didn’t like the idea of having to wait for it while it was in the oven. But he quickly forgot about it when I turned the tv on to do Norah’s physio.

The twins love helping in the kitchen.  I get them involved as often as I can.  It’s not always easy to do though, so sometimes there’s a bit more planning that happens before I start cooking.  If you’d like some ideas to keep your little ones occupied while you’re busy in the kitchen, check out some ideas for entertaining the kiddos.

Next to no Mess!

I love this recipe for Peanut Butter Banana Bread because you literally need a bowl, a fork, and a bread tin or silicone mould. The ingredients all get thrown into the same bowl and there is little to no mess! Gotta love that. Especially with 2 little people under your feet making enough of their own mess.

Not as Sweet as Cafe Banana Bread.

I’ll admit, the kids don’t inhale this the way they do with banana bread we occasionally buy in cafes. But they do eat it and enjoy it. Plus it only has 2 tbsp of maple syrup in it. Unlike the cafe ones that would be full of sugar.

If you’re organised enough, you could definitely make this ahead of time and take it out with you. It’s cheaper and healthier. I say that, but I know our kiddos will have the sugary cafe stuff again, because that’s life. Everything is moderation right?

Ok, I’m going to stop rambling now, the twins will be awake any second. Grab yourself some bananas and give this recipe a go. I’m sure it’ll be one you’ll make more than once.

Peanut Butter Banana Bread

Gluten free; delicious, peanut butter banana bread.

Ingredients

  • 2 medium very ripe bananas
  • 190 g almond meal 103.9g of fat
  • 90 g natural, smooth peanut butter 42.8g of fat
  • 2 eggs 10g of fat
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 150℃

  2. Mash the bananas in a medium sized mixing bowl.

  3. Add the rest of the ingredients and mix to combine.

  4. Spray a bread loaf silicone mould with oil or line a tin with baking paper and pour the mixture in.  Spreading it  it out as best you can.

  5. Place in the oven for 40 mins.

  6. After 40 mins, take the bread from out of the oven and loosely cover with some foil.  This will stop the top burning in the last 15 mins.

  7. Cook for a further 15 mins.  Remove the bread from the oven and stick a skewer into the middle of the bread. If it comes out cleanly, it's ready.  If not put it back for a couple more minutes, but make sure to watch it like a hawk.

  8. Leave to cool for 5-10 minutes.

  9. Cut and enjoy with or without butter.  Remember to add in the extra fat content of the butter if you are using it.
