Gluten free; delicious, peanut butter banana bread.
Preheat the oven to 150℃
Mash the bananas in a medium sized mixing bowl.
Add the rest of the ingredients and mix to combine.
Spray a bread loaf silicone mould with oil or line a tin with baking paper and pour the mixture in. Spreading it it out as best you can.
Place in the oven for 40 mins.
After 40 mins, take the bread from out of the oven and loosely cover with some foil. This will stop the top burning in the last 15 mins.
Cook for a further 15 mins. Remove the bread from the oven and stick a skewer into the middle of the bread. If it comes out cleanly, it's ready. If not put it back for a couple more minutes, but make sure to watch it like a hawk.
Leave to cool for 5-10 minutes.
Cut and enjoy with or without butter. Remember to add in the extra fat content of the butter if you are using it.

Makes 8 serves at approximately 19.5g of fat per slice.
