With the nights not really cooling down anymore, we are waking up to a hot house. Who wants to eat (or prepare) breakfast in the heat? I decided this morning that we needed something cold, fresh and colourful for breakfast. I grabbed the frozen berries out of the freezer and created a Berry, Cashew, Coconut Smoothie Bowl.

Beautiful Purple.

If you’ve been following my recipes, you’ll know Norah is obsessed with all things chocolate. I use cacao in nearly everything. Her absolute (morning game changer) favourite smoothie is the Chocolate, Peanut Butter and Tahini combo. I did wonder how this would go down without chocolate in it. Surely the beautiful purple colour would be enough to entice her to try the Berry, Cashew, Coconut Smoothie Bowl.

The twins did watch eagerly as I added the ingredients and they saw the coconut milk change colour. When it was done they did want to taste it. I poured some into 3 bowls, jazzed them up with some toppings and crossed my fingers and toes that they would eat it.

I think it’s yummo!

Well on one hand I can happily tell you that the Berry, Cashew, Coconut Smoothie Bowl is soooo yummy. On the other I can disappointedly tell you that the kids were not so keen.

The first time I made it, I ended up pouring it out of Norahs bowl and into to her squeasy gear snacker pouch. With some encouragement she did finish a serve. I’ve made it twice since then (because I wanted it for breakfast!) but neither of them would try it again.

The seeds in the berries, the cashews and the chia seeds do make it a little ‘grainy’. That makes me wonder if it was more of a texture thing than a flavour thing for the kiddos. Ah well, more Berry, Cashew, Coconut Smoothie Bowl for me.

Now that I’m making it just for me, I’ve been using my empty peanut butter jars to store half the mixture in the fridge ready for the next day. I find that it’s so filling, I haven’t even been hungry by the time lunch comes rolling around (or dragging, depending on the day).

For those not in the middle of a heat wave;

I have family overseas and I know it’s been freezing! I’ve joked that we need to mix our weather together to find some sort of happy medium. Now if you’re living somewhere that’s too cold for a summery smoothie bowl for breakfast, I’ve got you covered too.

Ingredients

Smoothie

  • 1 banana
  • 1 cup frozen mixed berries
  • 165 ml tinned coconut milk 40g of fat
  • 30 g raw cashews 14.8g of fat
  • 1 tbsp chia seeds 4.7g of fat

Instructions

  1. Add all the ingredients to a blender and blitz until smooth.  The end result may still be slightly 'grainy'.

  2. Share between 2 bowls, serve with toppings of your choice.

Total fat: approximately 60g

Serves 2 at approximately 30g of fat per serve
