Banana Pancakes with ‘sweet sauce’

My Very First Post (Yay!)

So let’s get real for a minute.  I am new to being a Mother and I am new to the life that is Cystic Fibrosis, but I am even newer at sharing my ideas publicly.  I am not a food photographer, a dietician/nutritionist or a chef, but I do want to share our children’s favourite meals with you…..  On that note, the very first recipe I have to share with you is Banana Pancakes.

Banana Pancakes with ‘sweet sauce’ has to be one of the twins’ absolute favourites. I can nearly guarantee that every time I make them, I will be clearing away empty plates when they are finished. I know that this recipe is quick and easy, but still healthy and loaded with good fats, to help with that much needed weight gain.

Little Tips to get the Children Interested;

I am learning as I go, but a quick tip is to entice children (especially toddlers) with words they can link to food you know they already like.  This is why I am not calling this recipe Banana Pancakes with Tahini, but rather; Banana Pancakes with ‘sweet sauce’.  They both love dessert and they both like tomato sauce….. Telling them they are having sweet sauce with their breakfast immediately gets them interested.

I have always liked the idea of getting children in the kitchen and getting them involved with the food they are going to eat.  I think this is a great way for them to become interested in new foods and hopefully get them eating more.  Obviously the amount of help they can give depends on their age.   The twins like to mix all the ingredients together in the bowl. You could also get your child to mash the banana or if they’re a little older the could even help at the stove.

Blueberries!

Norah is crazy about blueberries.  This excites me, because not only are they full of antioxidants they are a natural anti inflammatory.  She will eat them by the punnet full. On their own they don’t add enough calories to help her with her weight.  Adding them to the top of these pancakes draws her to the table.  The tahini sticks to the bottom of them and then she’s not only eating the blueberries, but she getting the much needed fat too.

Banana Pancakes and 'Sweet Sauce'

Quick, simple banana pancakes with tahini and honey topping.

Ingredients

Pancakes

  • 3 tsp Butter for cooking 12g of fat
  • 1 tbsp Coconut flour 0.6g of fat
  • 2 Eggs 10g of fat
  • 1 Banana
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Paste

Topping

  • 3 tbsp Hulled tahini 36g of fat
  • 3 tsp Honey
  • Strawberries
  • Blueberries

Instructions

Pancake

  1. In a large mixing bowl mash the banana with a fork.  

  2. Add the rest of the pancake ingredients and mix to combine.

  3. Heat the butter in a frying pan. Use a 1/4 measuring cup to scoop out the mixtures and place into the frying pan. You should get three pancakes at this size.

  4. Gently spread the mixture with the back of a spoon to form circles.

  5. Once the pancake begins to show slight bubbles, flip it over to cook the other side. You may need to press it back into shape once flipped.

  6. Cook for another another minute or so (until slightly browned). While the pancake is cooking prepare the topping.

Topping

  1. Mix the tahini with the honey.

  2. Wash and cut the berries.

Plating

  1. Once the pancakes are cooked, place the pancakes on separate plates and spread the tahini topping between the 3 of them.

  2.  Spread the blueberries over the top and share the strawberries evenly.

Recipe Notes

This recipe makes 3 pancakes at approximately 5.5g of fat per pancake (with cooking butter).

The topping is approximately 12g of fat per serve.

Total fat for one pancake with topping is approximately 17.5g of fat.

For extra fat add butter to the pancake before adding the tahini topping.
